Lately in Wellington, Florida (one of South Florida's many popular areas), I have been eating a lot of flavorful burritos. I think I have tried all of different styles for burritos and have decided to move on to tacos! I was initially very excited. If tacos were even half as delicious as the burritos I had been eating recently then I was in for a treat. In retrospect though, I was wholly unprepared for what followed. I have never had a taco taste as good as the Mediterranean taco before in my life! I don't know what I was expecting, but this was not it!

Immediately curious, I watched them start to prepare my taco. Or should I say tacos! Three soft flour tortillas were laid out just for me. They looked absolutely delicious, and I was anxious to see what happened next.

Then I was given the choice of any meat that I wanted. I was even able to add chicken and steak together, at no extra charge! Their other options included pork and chicken breast, all of which looked scrumptious!

The next step was a rare black bean hummus. This is where the protein was for the vegetarians! And wow was it incredible. I've never seen anything quite like it!

When I saw they they were loading on diced tomatoes, my excitement was full throttle. I am a huge tomato fan. I think they really bring so much to a meal, and when she told me that Florida burritos bought their tomatoes through local farmers, I was hugely impressed.

This establishment met and exceeded all expectations I had for cheese. It's usually very hard to get such an enjoyable array of cheese, but here there was no problem. The parmesan that I loaded my taco with was just heavenly.

I was more than willing to accept another suggestion of cucumbers. This ingredient ended up being one of my favorites in the whole taco dish. It gave the taco a coolness that it would have otherwise been without!

Finally, my tacos looked quite palatable. However, there was one very important step left. The sauce. For the mediterranean, they lathered a well-seasoned balsamic vinaigrette!
